'The 2015 Chablis 1er Cru Vaillons, tasted as a tank sample in London, has a ripe melon, honeysuckle and orange cordial scented bouquet that opens nicely with aeration. The palate is well balanced with a vibrant, stem ginger infused entry. There is plenty of animation and tension here, very taut, but it is the Les Preuses-inspired spiciness that I really appreciate. Bags of potential here.'
