‘The wine is partially destemmed, fermented with wild yeast and aged 18 months in large oak foudres. 2012: “Dense and grippy from the start, with a core of plum, black currant and fig pâte de fruit notes accented by liquorice snap, Turkish coffee and bittersweet ganache hints. The long finish lets the fruit play out, but this still has ample grip for the cellar. Best from 2016 through 2024.’
